I have a new install with a temp number. I want to be completely familiar with the system before porting my land line over to it.

I looked here for some answers, but it appears that I am missing a big step somewhere. As I log into "myooma", and I am presented with relative little in the way of options. Is there another console I am missing?

I have the premium service as a trial, but will most likely opt out when it expires. I don't need too many features.

Right now I have 3 questions:

1. When I pick up a call in the middle of the caller leaving a voice mail, does the unit continue to record, or does it stop where you picked up? Or erase the whole message.

2. How do I set up outbound caller ID blocking? I would like (by default) for all outgoing calls to be unidentified.

3. Where do I set up black/whitelisitng, and also call screening (where the caller MUST have a caller ID before the system will ring.

Have you clicked on the Home, Preferences, Account, and Add-Ons icons at the top of the my.ooma.com screen.
Everything you mentioned is there.

How do intercept a call that I want to answer?

You can intercept a call that you want to answer by picking up the phone! If you pick up while the caller is still leaving their message, the call will be connected normally, the voicemail recording will be stopped, and the speakers on your Ooma devices will turn off so that you may take the call in private.
