Using multiple splitters is fine as long as they stay connected. If both of the splitters have the pigtail you should be okay.

If you are porting a number away from Verizon do not cancel your service as that can abort the port.

The port has been completed. Can I now cancel my service?

Give it a day to make sure...

Oddly enough, once my AT&T port was complete, this automatically canceled my service.

I called AT&T to check about billing and learned it was canceled, but the way billing works, was already billed for a full month. Luckily I could cancel the pending payment, which will cause the AT&T billing computers to send me a final paper bill, which will be pro-rated.
