Can you simply take your hub and plug it between a broadband wireless router at a rental condo? It seems like it would be that simple, but is it? I couldn't find any other threads about it.

Absolutely.

As long as there is a broadband connection that allows the Ooma to communicate with the servers.

Just make sure you update your 911 location information in the lounge in case you have an emergency and need to call 911.
