I know that it's recommended that you put the ooma hub between the modem and the router, but I have chosen to put in after the router. Is there a real need to enable QOS if we're not doing any major downloading or putting any major usage on the network?

If you can use the phone and have no quality issues the answer is no.
Why mess with a good thing?
