I have a Polycom VOIP phone. It doesn't have your typical phone jack...I guess it may be called an ethernet jack. How do I connect it to my ooma?? Also, we have multiple phones and phone numbers coming off of one cable line. Can I hook up multiple ooma's to each phone line??

I'm gonna assume you received your polycom from your previous VoIP provider with some type of hosted PBX system.
If that's the case then it will not work with Ooma. The polycoms connect to a PBX system hosted by either yourself or a provider.
I dont have much experience with PBX, but we do have them where I work and we just plug the phones into our regular ethernet connection and the phones connect via vpn to our PBX system provider.
